Ground Turkey (Meatball) Pot Pie
*1 lb ground turkey
*1/4 c chopped celery
*1/4 c chopped carrots
*1/4 c chopped onions
*1/4 c chopped parsley
*1/4 c fresh parmesean
* 2 c tomato sauce (canned is fine)
*1 c wheat panko breadcrumbs
* 2 chopped garlic cloves
*1 c fresh mozzarella
*1 puff pastry sheet, thawed
Preheat oven to 425 degrees F. In a small bowl beat 1 egg with 1 teaspoon water & set it aside.
In a larger mixing bowl combine: celery, onions, carrots, garlic, parsley, breadcrumbs, parmesean, 1 teaspoon salt, 1/2 teaspoon pepper. Mix until combined. Add 1 egg & turkey. Mix until combined. Form 1 1/2 inch meatballs. In a large skillet (over medium) heat drizzle olive oil and cook meatballs, flipping periodically over, 3-5 minutes.
In a 9 in pie dish spread 1 cup of tomato sauce and arrange meatballs evenly. Top it with the remaining sauce, sprinkle mozzarella & top with puff pastry in a circular pattern. Brush lightly with the egg wash (from earlier) & bake till golden brown. It should take about 15-20 minutes.
Garnish with parsley & you're good to go!
